1 cup butter
2 cups sugar
3 cups mashed bananas( equals about 6 very ripe)
4 eggs well beaten
2 1/2 cups of flour( substitute with whole what if you like)
2 tsp. baking soda 1 tsp salt 1 tsp nutmeg
1 1/2 c. frozen blueberries (optional)
Preheat oven to 350F and lightly grease 2 loaf pans or a bundt pan.
Cream butter and sugar until light and fluffy. Add bananas, beat well, add eggs and beat until well mixed.
Whisk dry ingreds in a separate bowl and add to the banana mixture, stir until just mixed. Fold in the blueberries or chocolate chips. Pour into pans or Bundt pan and bake for approximately 1 hour. Bread is done when toothpick inserted in center comes out clean.
Cool on rack for 10 minutes before removing from pan. This freezes well wrapped in plastic then foil.
You can add:
1/2 cup of chopped nuts or 1 cup chocolate chips to the batter if leaving out blueberries.
