Chocolate Truffle Cookies

Cream in a large bowl:

1 c. softened butter

1/2 c. icing sugar.

Blend in:

1 1/2 tsp. vanilla

1oz. square of unsweetened chocolate, melted

At low speed, blend in:

2 1/4 c. flour

1/4. tsp. salt

Add, after flour is incorporated:

1 c. semi-sweet chocolate chips. (I use mini chips)

Shape into 1 inch balls. Mixture will be a bit crumbly. Press tightly and the ball will form enough to roll in your hands. Place on a parchment lined cookie sheet.

Bake at 350F for 10 minutes and cool.

Combine in a small bowl:

1/4 c. icing sugar

2 tbsp cocoa

Roll cooled cookie in this mixture and place in small paper cups. Store in an airtight container. This cookie freezes well!
