These are lovely and moist!
Combine in a large bowl:
1 cup sugar
2/3 cup vegetable oil
2 large eggs- beaten
Combine in a small bowl:
1 1/2 cup flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp salt
1 tsp cinnamon
Add wet ingredients to dry ingredients in large bowl.
Add:
1 cup finely grated carrots
1 cup of well drained crushed pineapple
1 tsp vanilla
Optional: 1/2 cup chopped nuts
Bake at 375C in prepared muffin tin for 20-25 minutes. I spray lightly with cooking spray or us liners.
Top muffins with finely chopped nuts or sprinkle on coarse sugar for extra crunch BEFORE baking
