Coffeecake

On to larger volume baked goods!

One of my earliest baking memories is trying to copy the coffee cakes my Mum made for special occasions (outside of the regular birthdays and calendar holidays). The smell of this cake baking…..heavenly!

Having German and British backgrounds lends itself to producing a baked “good” to have with coffee or tea.

Clara’s Special Coffeecake is a nod to the more dense, rich, less sweet Kaffe Kuchen. It is a sour cream cake with a delicious nut/brown sugar filling that is perfect after dinner, or as the Europeans do….mid- morning with a cup of strong black coffee. You won’t see me saying no to cake before lunchtime!

I have no idea to the origin of this recipe, it’s copied in my Mum’s hand on a stained and faded recipe card(thank goodness).

I like it plain, with vanilla ice cream or with a big dollop of lightly sweetened whipped cream. (one for the cake, one on top of your hot coffee!) Enjoy!
