Combine in a large bowl, then beat with an electric mixer until smooth and creamy. (about 1 min)
2 eggs
1/3 c. oil
1/2 c. sugar
1/2 c. brown sugar
Add and beat until incorporated:
1c. of mashed over ripe banana OR canned pumpkin puree OR 3/4 cup smooth applesauce.
Mix together in a small bowl:
1 1/2 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg, allspice and cloves (you can omit the spices for the banana version)
Add to the wet ingredients and mix at low speed until blended. (approx. 30secs)
Pour into a greased and floured 8 or 9″ pan.
Bake at 350F for 40-45 mins.
I sometimes add:
1/2 c. mini chocolate chips to the banana one,1/2 cup of chopped walnuts to the apple one and 1/2 cup of chopped pecans to the pumpkin one.
Simple Buttercream Icing:
In a small bowl combine 2 Tbsp soft butter, 1 c. icing sugar, 1 tbsp cream or milk and 1/2 tsp vanilla. Beat with mixer until smooth. If too thin add more sugar, if too thick add a dash more milk. Spread on cold cake.
