Ginger

There is no better ingredient to fill your home with a wonderful aroma than ginger! It is an ingredient that is both hot and sweet, warm and spicy, biting and woody. I love it in cakes and cookies. I also enjoy it in savoury dishes but there is nothing better than biting into a soft-centred, slightly warm, large cookie that smells and tastes of ginger……

And then there’s gingerbread.

I like the cake version, and there’s the gingerbread cookie that goes back to the 16th century! Anyone of German/European descent knows of Lebkuchen made at Christmas. There are gingerbread houses, gingerbread men, ginger cake, gingersnaps…the possibilities and uses of this strange looking root are endless.

I’m sharing a favourite cookie and cake here, ones that I make over and over. The cake is better the next day after baking, once the flavours have rested and the cookies, well, good luck waiting for them to cool before trying!

Whip the cream and put on the coffee!
