Lemon Blueberry Muffins

This muffin is more like a little cake, is in no way healthy, but my absolute favourite “go-to” for something special! It mixes up quickly as well!

 

Mix in a large bowl:

2 cups flour

1/2 cup sugar

1 Tbsp of baking powder

1/2 tsp. salt

Grated zest of 1 lemon

Beat together in a small bowl:

1 egg

1 cup milk

1/2 cup melted butter

Add wet to dry and just mix till moistened.

Stir in:

1 cup of fresh or frozen blueberries

Fill paper-lined, or greased muffin tins 2/3 full. Makes 12 or 16 depending on how full your pans are.

Bake at 375C for 20mins.

Topping:

1/3 cup melted butter , 2 Tbsp lemon juice,   1/4 cup sugar

Mix melted butter and juice together in small bowl, put sugar in a separate small bowl. While muffins are still warm, dunk top into lemon juice and then sugar. Serve warm or cooled.

(I don’t use the melted butter in the topping for more intense lemon flavour) Either way is delicious!!!!
