Lemon

Lemon is so versatile! I cook and bake with it, clean with it and drink it. Nothing is better when I need a lift in my struggle with seasonal disorder…it’s bright and from Florida! ( a little cheaper than a plane ticket!)

The zest provides a burst of flavour releasing its oils when grated.  The juice can be used in both sweet and savoury cooking. From salads to icing,  it provides an acidic compliment to anything. The whole lemon is great to throw in a chicken cavity or sliced on pork chops with onion, garlic and rosemary.

Lemon Blueberry Muffins….well, I’ll let you guess where they stand on my “favourites” scale. I found the recipe in The Best of Bridge Cookbooks (Approx. 1990?) and use it when I have unexpected company or someone needs a little sunshine on a dreary day. They mix up fast and are always a hit.
