Maple Walnut Oatmeal Muffins

Combine in a large bowl:

1 1/2 c. flour  (I replace 1/2 c white flour with 1/2 c. whole wheat flour)

1 c. rolled oats

1 c. sugar

1 tbsp. baking powder

1 tsp. salt

Mix in a separate small bowl:

2 eggs beaten

1 c. milk

1/3 c melted butter(to lower the fat content use oil)

1 tsp maple extract

Mix wet into dry until just moistened. Add 1 1/2 c. coarsely chopped walnuts and gently mix in. Spoon into buttered muffin cups.

Bake at 400F for approx 20 minutes, or until done.

Serve warm with Maple Butter! (Beat together 1/2 c. softened butter and 1/3 c. maple syrup)
