A recipe from the old tin box…
5 eggs
1 1/4 cups of milk
1 1/2 cups shredded cheese (Cheddar, Gouda, Provalone, Gruyere)
1/4. cup cooked ham, chopped
1/4 cup green onion finely chopped
1/4 tsp salt
Pinch of nutmeg
1 Tbsp. flour
Preheat oven to 350F. Butter a 9″ round baking dish or pie plate.
Beat eggs, stir in milk. In a separate bowl, combine cheese, ham, onion and spices and toss with flour.
Stir floured ingredients into egg mixture. Pour into prepared pan and bake for 35-40 minutes or until set.
Play with the cheese and filling combinations to suit your taste.
Serve with a toss salad for a quick lunch or light dinner.
