Preheat oven to 350F.
Mix in a medium bowl:
5 large eggs
1 c. cream or milk(I used 1 % milk and it came out fine)
1/4 c. mayonnaise
1 tsp each of onion powder, garlic powder, paprika
1 tsp black pepper
1 tbsp dried parsley
Salt to taste
Prepare a 9″ pie shell but don’t bake it first.
Cook 4 slices of bacon and crumble, set aside to cool
Steam 1c. broccoli florets (I throw them in the microwave for a minute on high to save time and dishes!)
Chop 3 green onions
Roughly chop 1 c. spinach leaves (I use my kitchen shears and clip right into the egg mixture).
Fold all the above ingredients in with the egg mixture.
Add 1 cup shredded old cheddar cheese and mix.
Pour into pie shell and sprinkle with 1/2 c. grated cheddar.
Bake for 50-60 minutes or until the middle is set. You may need to cover the pastry edges with foil to prevent over browning.
Cool before slicing and serve warm.
