I am lucky to have a friend that regularly brings me pure vanilla from Mexico. The price is so much better than it is here. I usually only need bake her something with vanilla and lemon to cover the cost! Win win for me!

I love the taste of vanilla in baking but would rather not smell it in the air. No candles, vanilla-scented hand cream. dish soap or essential oils for me.

The taste of it in a cookie, custard or cake….now you’re talking.

Vanilla can be the one essence that elevates a baked good to the highest level and my recipe for vanilla layer cake does just that.

I routinely try ‘new’ recipes for vanilla or yellow layer cakes and come back to this original one again and again. I like its simplicity, the way it bakes and how it marries well with a variety of toppings/icings and flavours.

I recently had the pleasure of making a wedding cake for one of my best friends’ daughters….out came the recipe for this cake! Together with the pure vanilla from Mexico, fresh unsalted butter and plenty of sugar the cake was a success!

When using any flavourings, spices, ingredients in baked goods or savoury recipes try your best to use fresh and real. You won’t regret the effort or the cost.
